WE PITCH WITH LACTOBACILLUS BREVIS AND LACTOBACILLUS DELBRUECKII. FIVE DAYS AFTER PITCHING WE ADD BRETTANOMYCES BRUXELLENSIS. WHEN PRIMARY FERMENTATION IS COMPLETED WE TRANSFER EVERYHING TO A NEW TANK AND ADD BLACK CURRANT. SECONDARY FERMENTATION TAKES AT LEAST SIX MONTHS. WHEN THE CHARACTER IS AT THE DESIRED LEVEL WE FILL IN THE KEGS AND BOTTLES.
