Description: Wild Bear begins as a double brown ale brewed with over 85% organic ingredients and fermented with brewer's yeast in stainless. Next it's transformed through aging in a large oak tank, called a foeder, for 20 months with added Brettanomyces yeast and Pediococcus bacteria. This combination of wild "bugs" and oak aging yields a complex and enticing aroma of classic Brett funkiness, cherries, vanilla, and a crisp, yet malty, tart flavor that will intensify with age, and an effervescent, oaky finish that leaves the palate clean.
