Description: Permutation is our experimental series of small batch offerings, showcasing the unique visions and innovative concepts developed by our brewing and cellar crew. Permutation #63 ventures into the world of hoppy wild ales - a balanced, 6.2% ABV beer that marries firm bitterness with funky aged hops and wild yeast character. Pouring a light straw with a vibrant head, aromas of fresh lemon, biscuit, green tea and a touch of funk hit the nose. On the palate, we find floral notes - lemongrass, dandelion, lavender - with a slightly sweet biscuit note following. The complex and qualities of the wild yeast culture provide the background for the hoppier qualities of the beer, without expressing too much acidity. Permutation #63 is medium-bodied with lively effervescence and moderate carbonation. A unique progression in our wild cellar's explorations!
