Description: Collaboration with Kobayashi. Cabernet Franc grapes from Red Willow. Several weeks on skins and then pressed off. The aromatics during fermentation were big herbaceous/pepper notes that you'd expect from Cab Franc. The beer transformed so much from pressing through the 6-7 months in barrel after... a distinct fruit character came to the front, the herbality pushed to the back. The finished beer is a dark pink/light red, creamy, with a prominent cherry character.
