Description: Cascade's head brewer Mike Mathis and our own Brett Ellis (Co-founder & head brewer) and James Bardgett (barrel wrangler) conceptualised this barrel and foudre aged plum sour. Cascade are internationally renowned for producing some of the finest fruited sour beers, and the recipe for this one was created collectively between Mike, James and Brett back in 2018. Unlike a normal collaboration where the guest brewer brews a beer with us, when Mike came over he helped us to pick-out the most select barrels to inoculate the beer with, using his great knowledge to advance the yeast and bacteria and therefore the amazing flavours of this beer. After its inital ageing in barrel for a year, we then further aged it in Foudre with 200kgs of Victoria plums and 300kg of Merryweather damsons for the secondary fermentation.
