Description: Sour with Phantasm, aged in Sauvignon Blanc Barrels with Chardonnay Grapes Bottle Release 12/23 - $16/500 mL We layered this beer with white wine grapes at each stage of the process. Brewed with dried New Zealand Sauvignon Blanc grapes, and fermented with a Thiolized strain to release their intense tropical aromatics. Then soured in Sauvignon Blanc barrels with a house culture from our friends at Bissell Brothers (Portland, ME) for deeper vinous flavor and acidity. Finally, refermented on 300 lbs of Maryland Chardonnay grapes for fresh juicy white grape flavor! Brewed: 10/18/21 – Bottled: 11/1/22 Final pH: 3.09 – Cellar Up To: 3 years Bottle Count: 732 – 1 Pint .9 fl oz/500 mL
