Description: Table Table blended with 20% of favorite 3 year-aged sour. The golden sour addition provides just enough acidity to the beer to make it bright, while still providing the ability to age very well for a long time in the cellar despite the low ABV of the table beer. Blending sour beer with a bone dry saison ensures the beer won’t get too acidic over time - essentially halting the acid producing bacteria and instead allowing the funky nuances of the Brettanomyces culture to slowly evolve and change as a living product. 8 months bottle conditioned. Currently showcases flavors of overripe pear, wet hay, granite minerality and a delicate cidery acidity. Very dry, slightly tannic, green apple skins.
