Description: Twigs und Berries is a weird ale. We set out to brew a traditional Finnish Sahti and twisted it a little. We used a sour mashing technique to develop tartness. This is an unhopped beer - we used juniper branches to make a juniper "tea" to sparge with and heaped juniper berries into the mash. After a long primary fermentation and lagering for a month, the resulting beer is fruity, tart and dry.
