Description: Inspired by the Belgian lambic breweries, this traditional turbid mashed beer was brewed with 60% local malted barley and 40% local raw wheat. Boiled for 3 hours with aged whole leaf hops and cooled overnight in our coolship, this beer was then racked into clean/neutral oak casks and allowed to spontaneously ferment and mature for two years. Packaged still in a bag in a box, without carbonation, to truly showcase our local terrier and flavors. Mild acidity paired with soft minerality, malt complexity, and aged hop aromatics.
