Description: MACH-LIMIT is a golden sour ale made using only wild, coolship caught microbes that is combined nearly 50/50 with the juice from grapes grown in Palisade, Colorado and processed in-house. After adding the Petite Verdot and Cabernet Sauvignon grape juice and letting the beer rest for months in oak, we transferred the finished beer into a freshly emptied Laws Whiskey barrel and let it sit for another two months, giving the beer a subtle bourbon character. You are left with a robust wine-beer hybrid that is lightly funky, tart, and full of dry oak and soft tannins that are followed with vanilla, caramel, and spice from the bourbon barrel.
