Description: PHAZOTRON is a sessionable wheat beer that was fermented using the resident wild yeast from house-crushed Merlot grapes from Colterris Wines in Palisade, Colorado. The grapes were used not necessarily for flavor, but for the microflora that is resident on the skins, allowing for a type of spontaneous fermentation which is quite different from our normal use of a coolship to capture microbes from the air. After aging, the beer was refermented on a large amount of raspberry. The native yeast gives a subtle funk and pleasing dryness to the soft wheat malt backbone, which showcases the clean and bright acidity from the fruit.
