Description: This small batch creation by Bruery Terreux Cellarman, Mike Miranda, follows a different path - from inception to fermentation. Mike combined sour blonde wort with rice sugar and fermented it with sake yeast. The hybrid was finished off with San Diego super yeast - a neutral, fast-acting strain, which allowed the sake character to shine through. As the base beer settled out, Mike enacted the final part of his plan: adding 45 pounds of freshly pureed Asian pears, sparking a round of refermentation before the beer was packaged to premier at The Bruery 9th Anniversary Festival and special events thereafter.
