Description: An oat wine, secondary-fermented with a mixed culture of Brettanomyces, lactobacillus, and pediococcus, in a red wine cask. Its flavour profile will never truly be finished, but along the way you'll find Brett-derived funk, lemongrass, lime zest, pineapple, tangerine peel, and delicate carbonation. The label is left almost blank, allowing you (like the bugs) to leave your own stamp on our beer.
