Description: Within The Twilight is a blend of two different wild ales fermented with various strains of brewer's yeast, lactobacillus, brettanomyces and aged in red wine barrels for one year. After barrel aging & blending, we added boysenberries at a rate of 2lb/gallon and let it all re-ferment together until no residual sugar remained. The result is a mildly funky, mildly tart wild ale exploding with notes of boysenberry jam & boysenberry compote.
