Description: Super Saint Thomas is not just an Imperialized version of our Mosaic IPA "Saint Thomas," it's a double dry-hopped Happy Birthday to the man we could not have built this brewery without. This beer opens up with a barrage of freshly made tropical fruit salad, bellowing from the glass like a smoke signal from the Vatican. Honeydew Melon, citrus, fresh green grapes, and hints of under-ripe pineapple and freshly harvested marijuana dominate the palate in a sticky and resinous manner. Shockingly clean and restrained in malt character for a Double IPA of this size, letting the Mosaic hop character slam-dance all over the palate, finishing with an assertive yet refreshing note of freshly cut ruby red grapefruit.
