Description: What is a ryewine? It?s similar to a barleywine, except we use a large amount of rye malt in place of the barley. Where it differs from barleywine is that it?s a little lower in alcohol content, and unlike our Hopsquatch, it is considerably lower in hop bitterness and aroma. We did dry-hop the ryewine, though, with Hersbrucker hops, which are known for their spicy finishing touches. The ryewine will also be noticeably drier, and less sweet than Hopsquatch. So why rye? Rye imparts a spicier, heartier flavor to the beer. As this was one of our seasonal Winter Wobblers, which tend to be darker in color, we added a malt called chocolate rye. This imparts a darker hue and lends some roasted flavors to the beer. The batch you are enjoying has also been aged in Four roses Bourbon barrels for several months, which adds some smooth, smoky elements.
