Description: Consonance & Dissonance is our ongoing exploration of the distinct harmony between wine grapes and spontaneous beer. Once again, we worked with our family at Blue Heron Vineyard at Foster Farm in South Windsor to select a unique variety and target the ideal picking window for our use - with this iteration we opted for Marquette, a deeply flavorful hybrid variety. As the dark blue/black fruit color would suggest the grape is known for its rich fruit character (dark cherry, currant) a bit of spice and firm tannin. A carefully assembled multi-year blend of spontaneous beer was transferred onto the crushed fruit just after harvest (in 2022) and given time for a complete refermentation. We then transferred the beer back to a 750L oak cask to rest for another several months before bottling last summer. As we’ve mentioned before, the extended time in oak and glass serves to round out the beer dramatically.
