Description: We’re calling this one a Pilsner because it was inspired by this classic style, and shares the bulk of its ingredients in common. German Pils malt, Czech and German hops, clear, golden color- These all suggest Pilsner. But this is no classic Pilsner, as it is fermented exclusively with Brettanomyces Claussenii yeast. The flavor and aroma is dominated by this unique yeast. Aromas of pear and apple come across initially, followed by sweeter aromas of tropical, or very ripe fruit. Then you might notice a hint of tartness, which leads to a bracing tartness in the palate. Finally, a hint of “funk” or musk just to keep it from getting cloying. And somewhere in there you might get a little crisp malt flavor too! This makes for a complexly flavored beer evoking the fruity, tart character of Lambic beers from the Zenne valley region of Belgium.
