Description: This varietal is produced from a prairie honey we procure out of Glacier County, Montana, on the border of Glacier National Park. The honey is a blend of 60% cultivated alfalfa honey and 40% wild clover. It's the lightest honey we've ever worked with -- really beautiful stuff. Producing meads from light, subtle honeys can be a great challenge because off-flavors have nowhere to hide. When properly executed, however, the results are breathtaking. This varietal delivers a sublimely succulent, brut dry bubbly with hints of crisp honeydew melon, pear, green olive, and jasmine. It has a terrific effervescence and its color is so crystalline that, in the glass, it might be mistaken for sparkling water.
