Description: This blend is a result of macerating homegrown grapes (appassimento) from the Kailashki Misket variety, local to the Danube Plain, on 1yo and 3yo lambic. The grapes were sourced from Elitsa's family vineyard and were carefully selected. Before bottling, we backblended with younger Girardin lambic in order to obtain a final fruit intensity of 330g of Kailashki Misket per liter.
