Description: Almost two years ago, Phil Wymore, Owner and Brewer of Perennial Artisan Ales in St. Louis, Missouri visited our small brewery. Together we brewed a fresh beer for immediate release (Cafe de Olla) and designed a separate recipe for extended barrel aging. That barrel recipe brew was then aged in Tawny Port barrels for 21 months. To balance out the tannins and enhance the flavors of the port wine, we added a touch of Tanzanian vanilla beans, about a third of our normal vanilla dosing rate. With notes of French oak, cherry, strawberry, raspberry, and heavy blackberry, Night Cap is the perfect sipper to end your day with.
