Description: Consecration (06.17.2015) - is a Dark Ale aged in Cabernet Sauvignon barrels from local wineries. It is aged for 8-12 months with currants, Brettanomyces, Lactobacillus, and Pediococcus. Consecration is one of our Lambic-style beers. We ferment the base beer for Consecration in stainless steel and after fermentation, it is transferred to the barrels with the fruit and Brettanomyces (added at the same time). Two to three months into barrel-aging, the souring bacteria is added. At Russian River, both Pediococcus and Lactobacillus bacteria are used in most of the barrel-aged sour beers.
