We aged a pale sour in them for a year creating a fun fruity aroma. Then we refermented the resulting moderately tart beer on 70 lbs of clover honey from Lord Byron Apiary (Thurmont, MD). Finally Zeke spent an afternoon with us at Fox Haven Farm (Jefferson, MD) where we selected fresh chamomile to reinforce the apple aroma, and mugwort for a peppery aroma. Brewed: 12/11/20 - Bottled: 6/7/22 Final pH: 3.17 - Cellar Up To: 5 years Bottle Count: 576 - 1 Pint .9 fl oz/500 mL
