Description: Apricot Pale Sour Ale with Phantasm Finished in a Cognac Barrel Bottle Release 10/27/23 (2023 Wood/Founders Club Exclusive) We selected one of our favorite barrels of pale sour bases for additional aging in a French Cognac barrel. The rich raisin-like richness from the barrel is a perfect foil for the snappiness of fresh apricots from Toigo Orchard (Shippensburg, PA). We used a moderate fruiting rate to avoid obscuring the barrel, Phantasm, and house culture! Brewed: 10/18/21 – Bottled: 7/26/23 Final pH: 3.46 – Cellar Up To: 4 years Bottle Count: 406 – 1 Pint .9 fl oz/500 mL
