Description: Halcyon Daze is a white wheat and oat Saison brewed back in July of 2016. It was primarily fermented with a blend of Saison yeasts, a few Brettanomyces strains, and some resident lactobacillus from another project we have in the works. After months of fermentation, we racked the base Saison into a tank containing passion fruit puree at a rate of 3lbs per gallon of Saison, and laid it to rest for another half year before conditioning further in the bottle. Notes of bright citrus zest, tropical fruit, and a farmhouse funk with a pleasant honey sweetness lingering below a tart finish.
