Description: In the La Coterie book from last year I mentioned wanting to focus on more experimental brewing and blending. The result has been the CDC line and now some small, delicately fruited expressions, the first being Satsuma, and now its sister, Yuzu. For this Saison, the intention was rooted in delicacy, with our first "Yuzu Juice" usage. We sourced this juice from a small importer who also assisted in our banana nibs for Brooklyn Vibes. The result is a beer fitting of the Side Project name and one which we hope to brew again soon. Over-ripened exotic citrus, a very soft and rounded acidity as a balance, and a refreshing finish exemplify this experience.
