Description: Authentic Lambic beer is produced by spontaneous fermentation, where it is exposed to the wild yeasts and bacteria that are said to be native to the Senne valley, in which Brussels lies. It is this unusual process which gives the beer its distinctive flavor: dry, vinous, and cidery, usually with a tart aftertaste. We fermented this Ale using a distinctive Lambic yeast strain Captured from this region. It spent 5 months in Hungarian oak Chardonnay barrels where Raspberries were added. The result is a wonderfully complex beer with a crisp and tart fresh Raspberry flavor.
