Description: We present our Terroir Project, using Cabernet Sauvignon sourced high in the Malibu Mountains from the Montagneux Vineyard. Our attempt at Carbonic Maceration and Fermentation is a cofermentation with a lambic styled wort and fermented 100% natively and natural. Aged in French Oak Puncheons until final maturity. Thanks to our friends at Firestone Walker for including us in the Terroir Project!
