Description: Illusion of Bliss was brewed with a base of 75% spelt and 25% wheat, hopped with noble Saaz and Tettnang hops, then fermented and aged for over a year in the finest Danish cherry wine barrels with a mixed culture of Saison yeast, Brettanomyces, and our house culture. ⠀ It’s a blonde beer with the flavor and aromatics of a beer that was conditioned on cherries! Cherry lollipops, oak, delicate rustic farmhouse character, some tropical pineapple and mango, amazing acidity, and prickly effervescence.
