Working in tandem with German beer historian Benedikt Koch and Escarpment Labs of Guelph, Ontario, Saccharomyces and Brettanomyces yeast were isolated from old bottles of traditional Berliners and added to the wort. The name comes from the tradition of naming this style of beer from the city or area where it was brewed.
