Description: Barrel-aged Elm and Fitzhugh. A collaboration with Jester King Brewery. Fermented with Jester King house mixed culture and our local/Brett Saison culture, steeped with Calamint & Winter Savory from their farm and dry hopped with Saaz. We tucked away a small portion in 3 oak barrels to rest and evolve. 2 red wine and 1 white wine. 6 months of natural re-fermentation in the bottle. Impressions of: Floral fields - oak - leather - fresh lemon + herbs
